Carrot Cake Granola Bar
Serves 6.

Cooking and preparation time: 55 minutes
Ingredients:
- 350g Oats 
- 2 Tsp. Mixed Spice 
- 125g Walnuts, roughly chopped 
- 1 Large Carrot, peeled and grated 
- 75g Butter 
- 60g Honey 
- 100g Sultanas 
Method:
- Heat oven to 180C. 
- Melted unsalted butter and honey. 
- Toss together the oats with the mixed spice, roughly chopped walnuts, sultanas and grated carrot (squeeze out excess water). 
- Add to hot butter and honey, mix well. 
- Place in greaseproof tray and bake for 30-40mins. 
- Allow to cool, cut into squares.
