Chocolate Orange Mousse
Serves 10.
Easy. Preparation time: 15 minutes,
allow 6 hours to set in fridge
Ingredients:
- 200g Dark Chocolate (70%), broken into pieces 
- 6 Eggs, separated into whites and yolks in two bowls 
- 1 Orange, zest using peeler 
- 3 Tbsps. Espresso Coffee 
- Pinch of Salt 
Method:
- Grate the orange and further chop the peel until reduced to small bits. 
- Place a bowl over a pot with boiling water, and add chocolate, orange peel and coffee. 
- Let chocolate melt while continuously mixing the ingredients. Once melted, remove the bowl from the heat and let it cool on the side. 
- Whip the egg whites with a pinch of salt. 
- Add the egg yolks to the lukewarm melted chocolate. Pour the mix into the whipped egg whites, and slowly combine them with a fork. 
- Pour the mousse into a large serving bowl or into small serving glasses. Leave the mousse to rest in the fridge for 6 hours.
