Half ‘n Half Spaghetti Bolognese

Serves 4 // Easy / Preparation & Cooking Time: 1 hour 15 minutes

Ingredients:

200g beef mince

200g puy lentils (can use kidney beans, black beans, etc instead)

1 tbsp olive oil

2 x 400g tin tomatoes

1 medium onion

2 carrots

2 celery sticks

2 cloves of garlic

2 tbsp tomato pureé

125ml red wine

1 tsp oregano

400g brown spaghetti

Method:

  1. Heat oil in a frying pan over a medium heat and add in the meat. Once browned remove from pan and set aside.

  2. Dice the vegetables, crush the garlic and add to the same pan to soften for 10 minutes.

  3. Once softened add the tomato purée, tined tomatoes, wine, oregano, meat, and pulses of your choice.

  4. Bring to the boil and then leave to simmer for 1 hour until you have a rich thick sauce.

  5. Boil a saucepan of water and cook your spaghetti per packet instructions. Keep some of the water to loosen the sauce a bit if necessary.

  6. Serve the Bolognese over spaghetti with a sprinkling of parmesan if desired and enjoy!
