Belgian Waffle served with Berry Compote & Greek Yoghurt

Serves 4 // Easy / Preparation Time: 15 minutes

Ingredients:

4 Belgian waffles (fresh or frozen)

400g Greek yoghurt

320g frozen mixed berries

40g caster sugar

Dusting of icing sugar

Method:

  1. Preheat the oven to 160C.

  2. Warm the waffles for 10 minutes from frozen, reducing the time by 5 minutes if fully defrosted.

  3. To make the compote, place the berries in a saucepan with the caster sugar and bring to a boil. Reduce the heat and allow to simmer for 10 minutes.

  4. Remove from the heat and allow to cool.

  5. Serve the warm waffle with Greek yoghurt and your homemade berry compote.

  6. Dust with icing sugar and enjoy!
