Chia and Berry Pot

Serves 4 // Easy / Preparation Time: 15 minutes

Ingredients:

80g chia seeds

480ml almond milk

1 tsp cinnamon

20g honey

20g almonds

20g pumpkin seeds

100g blueberries

50g raspberries

Method:

  1. Preheat the oven to 170C.

  2. Mix the chia seeds, almond milk, 15g honey and cinnamon together until combined. Store in the fridge overnight.

  3. Mix the pumpkin seeds, almonds and remaining honey together. Lay on a roasting sheet.

  4. Roast in the oven for 8 minutes until golden.

  5. Top the chia pudding with the berries and roasted nuts.

  6. Enjoy!
