Peeled Vegetable Salad with Homemade Vinaigrette Dressing

Serves 4 // Easy / Preparation Time: 20 minutes

Ingredients:

1/2 Pak choi

1 carrot

1/2 cucumber

1 tbsp wholegrain mustard

1 tsp lemon juice

Handful mint leaves

1 tbsp red wine vinegar

Method:

  1. Peel the Pak choi, carrot and cucumber and add to a bowl.

  2. Add 1 tbsp olive oil, wholegrain mustard, lemon juice, red wine vinegar and torn mint leaves into a jar with a tight lid and shake to mix.

  3. Pour the dressing over the peeled vegetable and mix to combine.
