Glazed Tofu with Egg Noodles

Serves 4 // Easy / Cooking Time: 20 minutes

Ingredients:

600g egg noodles

400g tofu

400g stir fry mixed vegetables

1 tbsp sweet chilli sauce

1 tbsp soy sauce

1 tbsp olive oil

thumb size of garlic

1 tbsp garlic puree

Method:

  1. Chop tofu into cubes.

  2. Add the sweet chilli sauce, soy sauce, olive oil, grated ginger and garlic puree into a jar with a tight lid, shake the jar to mix.

  3. Fry the tofu for 5 minutes to get golden and crispy.

  4. Add the marinade and stir fry mixed vegetables and cook for a further 10 minutes.

  5. Bring a saucepan of water to the boil and cook the egg noodles for 4 minutes.

  6. Combine all the components together and serve.
