Puy Lentil Cottage Pie with Chive Mash
Serves 4 // Easy / Cooking Time: 40 minutes
Ingredients:
130g dark green speckled lentils
200g onions
130g carrots
X2 garlic cloves
1tsp vegetable oil
8g vegetable bouillon paste
330g tinned chopped tomatoes
130g peas
7g gravy browning
600g potatoes
70ml milk
4g chives
3g white pepper
Method:
Place the lentils in a sieve and rinse with water. Add to a saucepan and fill with water till the lentils are submerged with an extra inch on top. Bring to a boil and then simmer for 30 minutes until soft and cooked.
Dice the onion, chop the carrots into half-moons and mince the garlic. Heat the vegetable oil in a saucepan and sauté the vegetables with the garlic until soft. Add the bouillon, chopped tomatoes, lentils, peas, and gravy browning and let simmer for 10 minutes.
Peel and chop the potatoes into quarters. Boil for 10-15 minutes until soft. Drain the water and begin mashing the potatoes. Add the milk and chives as you go and season as needed.
Preheat the oven to 200C/ 180C Fan/ Gas 6. Place the lentils in a dish and top off with the mash. Bake in the oven for 20-30 minutes until golden on top.
