Chickpea Blondies

Makes 10-12 // Easy / Preparation Time: 40 minutes

Ingredients:

250g tinned chickpeas (drained)

25g oats

10g tahini or nut butter

1 medium banana

1 tsp baking powder

1 tsp vanilla extract

20g maple syrup or honey

1 tbsp water

100g chocolate chips

100g frozen raspberries

Method:

  1. Preheat oven to 170C degrees.

  2. Grease and line a 8-inch square inch baking tray.

  3. In a blender add the chickpeas, oats, tahini, banana, baking powder, vanilla, maple syrup, and water. Blend on high until smooth.

  4. Add half the chocolate chips and blend briefly to incorporate into the mix.

  5. Pour the batter into the prepared tin, and smooth out evenly.

  6. Sprinkle the remaining chocolate chips and frozen raspberries over the top and gently press into batter.

  7. Bake in the oven for 25-30 minutes or until golden brown.

  8. When cool, chop into 10-12 squares and store in an airtight container in the fridge.
